I'm always on the hunt for easy healthy snacks for my family. Some of our favorites are Blueberry mini muffins, Banana split cake, Vegan Cupcakes and Double berry ice cream, but I'm telling you, these Snickerdoodle Cookie Dough Balls are a HUGE hit.
Let me tell you how I know I have a winner recipe!
Sometimes, when I make healthy treats, at least one person in the family thinks they aren't a “treat.”
In other words, this person, who shall remain unidentified, won't eat them.
Or if there's a similarly “wholesome, not that incredibly tasty snack” in a wrapper from a health food store, he'll gobble that down too, but since it's from our kitchen and doesn't have a wrapper, he'll say it's not that great.

Ingredients:

  • ½ cup almond butter
  • 1 tsp cinnamon
  • 3 Tbsp coconut flour
  • 3 Tbsp coconut milk
  • 3 Tbsp xylitol
  • 15 drops vanilla liquid stevia
  • ½ tsp vanilla extract
  • ¼ tsp salt 
Topping
  • 3 Tbsp xylitol 
  • 1½ tsp cinnamon

How it's made:

  1. Put all ingredients, except the topping ingredients, into a bowl.
  2. Mix well until combined thoroughly.
  3. Roll into balls and roll to coat in the topping.
  4. Store in refrigerator.
