Learn how to make a homemade butter apple cake
Ingredients:
- 625 g plain flour
- 300 g caster sugar
- 250 ml milk
- 14 g dried yeast
- 180 g butter
- 1 egg
- 16 g custard powder
- 750 ml apple juice
- 1 tsp vanilla extract
- 2 kg apples (such as russet, peeled, quartered, cored and mixed with lemon juice
- 1 juice of 1 lemon
- 150 g almonds
How it's made:
Preheat the oven electric 200°C/Fan 180°C/gas mark 6
In a bowl mix 100g of flour and 200g of sugar in a bowl and form a hollow.
Heat the milk and dissolve the yeast in it and stir into the flour, cover and place somewhere warm for about 20mins to prove.
Meanwhile, melt 80g of butter; knead the melted butter and the egg into the dough with a dough hook. Once again cover the dough and leave in a warm place for about 30mins.
Mix the custard powder with 100ml of apple juice until smooth, add the vanilla extract.
Place the apples with the remaining apple juice and 50g of caster sugar in a saucepan, cover and simmer 2-3mins. Take the apples off the heat and stir in the custard mix, return to the heat and allow to simmer for 1min whilst stirring.
Briefly knead the dough again and divide in half. Roll out to fit a 32 x 39cm rectangle baking tin. Grease and flour the baking tin and place half the dough in the bottom. Evenly spread the apple mixture over. Place the second dough rectangle over the filling and lightly squeeze the edges to seal.
Using the back of a teaspoon press depressions into the dough. Cut 100g of butter into small cubes and place in each of the depressions. Sprinkle with the flaked almonds and 50g of sugar
Place in the preheated oven and bake for 25-30mins until golden brown. Once cooked remove the cake and allow to cool on a wire.
